One of my new years resolutions...
Jan 14, 2013 / Our Life
I wouldn't call it a resolution as much as a goal.
While we were in Indiana over Christmas, there were a few days where Luke was feeling under the weather and I decided it was my job to make him breakfast. What you may not know about Luke and I is that in our life, somehow or another, Luke cooks most of our meals. Luke loves to cook and in another life he would love to be a chef.
The interesting thing is that I'm also a good cook, and I also like to cook. I'd just say, Luke is a little bit better of a cook, and he enjoys cooking more than I do. But there was something a little strange in our husband-wife dynamic when Luke was cooking the meals, and while we were in Indiana and I was doing some of the cooking, I really liked it, and Luke liked it too.
So, one of my new years' resolutions (again - more of a goal) is to cook my husband breakfast every morning. This works out great because we usually figure out lunch together (like a sandwich, or cheese and crackers, etc.) and then Luke's still able to play chef for dinner.

So, we're about 10 meals in now, and I haven't missed a single day. We've had lots of adventurous stuff that I would NEVER eat for breakfast (like spinach or onions, etc.) and also some basic stuff like scrambled eggs and bacon. But one of the meals we've had twice so far is these streusel topped blueberry muffins.
It's really nothing special, it's a packet of Betty Crocker blueberry muffin mix, and I use milk instead of water like the packet calls for. Then, because Luke told me his favorite part of any muffin was streusel topping, I looked up a recipe for streusel topping (which is just sugar, flour, cinnamon, and butter) and sprinkled that on top of it before baking.
I'd love to hear some other breakfast ideas that you might have!
