We're Eating like Cavemen!

We are at the end of week two of our Paleo "diet" and we love it. If you follow along with us on Instagram, you are already in the know about this!

I have to admit - when Cat first asked me about starting Paleo, I was thinking, "Here we go again, another crazy trend diet to try!", but I listened to her and started to research it a little bit myself. Some of our good friends have done Paleo in the past and are still continuing to do it, so I figured we could give it a shot.

Disclaimer time! The first couple of days were awful! We found out from Dr. Google that our bodies were going through withdrawals from not having any sugar or other "bad" foods that we ate daily. A massive headache and fatigue followed us around for the first few days, but once we got over that hurdle, the rest has been great. We don't feel like we are limited on anything - we just have to Paleo-ify things we want. We have made tortillas, brownies, coffee creamer, and tons of other great foods! If you are interested in giving Paleo a shot, Cat and I have some Pinterest boards going on good recipes we have found.



Luckily for us, some of our friends have gardens and have so graciously offered fresh produce to us that they have been growing. Our kitchen is packed with fruits, vegetables, and fresh herbs!

In other news, Houston even has it's own Paleo restaurant, the Corner Table, and we are excited about making the trip in to town and trying it out.

Meet Lindsey

If you have followed along with us over the years, you will know that our life is always an adventure and full of changes! What started as newlywed cattle ranchers with a blog for our family has turned in to an international wedding photography business. We are constantly making renovations to our little home in the middle of nowhere and jump at fun adventures that come our way. Sushi is even something we love nowadays! We can't help but smile at how life works and how quickly things change.

Our whirlwind journey has blessed us with crossing paths with some wonderful people. As our business has grown over the years, other photographers, newer to the industry have reached out to us for knowledge, just like we still do to the photographers and business owners we admire. It is similar to those lengthy visits we love with our grandparents - soaking in every word and piece of advice from someone who has experienced so much.


A few years ago, Lindsey got in touch with us and wanted to set up a full-day mentoring session. When we got together, in the mix of photography questions, we got to know Lindsey personally and quickly knew that we were going to be friends. First, she is such a kind and caring person, but WOW, she has a talent for photography like no other. We kept checking in with her after our time together, and each set of images she posted was better than the last. She impressed and inspired us to be better at our own craft. When we find someone we connect with so much, we don't want to let them go!

In 2012, we shot 30 weddings. We had an amazing time getting to know all of those couples and their families, but we found that with shooting their engagements, bridal sessions, and their wedding days, we didn't have the time we wanted to to relax, spend time with our friends and family, participate in church activities, or just couch it. In 2013, we decided we wanted to cap our number at 15 weddings, but we ended up shooting 19 weddings because we just couldn't say no to the fantastic couples who came our way.

We received 289 emails to our website from couples inquiring with us about shooting their 2013 wedding. We shot 19 weddings last year. That means we had to tell a lot of FANTASTIC couples that we were booked. Or that we had too many weddings that month. Or that we were out of their price range.

We started thinking... what if some of those couples could still be taken care of by OUR business? What if they could receive the same spectacular photography experience from start to finish, just with another photographer shooting their pictures? It would have to be someone who fit a very challenging resume: outgoing personality, polished, professional, friendly, trustworthy, and of course, a talented photographer. There was one person who immediately came to our mind: Lindsey.

Soo..... many conversations and emails later, we are beyond excited to officially announce that Lindsey has joined our team as a company photographer for Luke and Cat Photography! Lindsey is based out of Victoria, Texas and is available for weddings in Texas and beyond! Over the past year, Lindsey has been going with us to help second (or third) shoot weddings and learning the ropes of how WE do things, as we started to book weddings for Lindsey for 2014. Lindsey shot the first wedding of 2014 for our business, which we featured on the blog yesterday (check it out!) and we thought it was the perfect time to introduce you to her!

Call me crazy, but I think that Fall is getting closer and closer here along the Texas Gulf Coast. The early morning air is a little crisper, evening seems to creep up quicker, and retail displays are changing to autumn decor and clothing.

The changing of a season always brings about a little spark of excitement. Cooler temperatures and fall decor have us wanting to make frequent trips to home goods stores to find our next wreath or warm fuzzy blanket to curl up on the couch with. Of course, we know our favorite parts of fall, but we want to get your input on this too!
